FLORENCE, ITALY – The European Commission in these days approved a new Protected Geographical Indications for a Tuscan product: the Mortadella di Prato. Today, April 20, 2016, the Council of Tuscany Region hosted the official presentation of this traditional product.
The path to this goal began in 2000 when Chamber of Commerce of Prato (the city is on the doorstep of Florence), initiated a campaign to save this traditional cold cut and renew interest in its production.
Even though there was a shortage at the time of pork butchers who knew the recipe, within a few months guidelines for its production were adopted according to the most traditional method and presented to the European Commission.
The Mortadella di Prato is a Tuscan speciality flavoured with pounded garlic, very different from another famnous kind of Mortadella made in Bologna and flavoured with spices, including whole or ground black pepper, myrtle berries and pistachios.
This new denomination has been added to the list of more than 1,300 products already protected in Europe.
