The Christmas cakes? You buy it in the bakeries

Pandoro sugaredThere are 111,997 families in Florence who will bring on the Christmas table “craftsmen” cakes, non-industrial product. A study of Confartigianato Florence say that 25.5% of the population will choose “Christmas sweets” made from 525 bakeries opened in the city.

In Florence and its province sales of “panettone” (56% of total) exceeds sales of “pandoro”, but food shopping is generally lower than in 2010 (-6.5%), even if the number of companies in this sector remains stable.

Despite the strong increases in raw material costs registered in the last year (+16% sugar, +7.3% flour, +6.7% butter, +23.5% cocoa) the pastry artisans have limited increases price of sweets to 2.6%, almost a point less than the 3.2% inflation rate for the same period.

Prices range for “panettone” is between 17 and 28 euros per kilo, for “pandoro” is14 to 30 euros per kilo, and for “ricciarelli” is 20 to 32 euros per kiloi. “We are confident that the sales trend – explained Giovanni Guidarelli, coordinator of the Food Industry of Confartigianato – will be different during the next weeks, when a lot of people will focus their sales in industrial products.”
